The most known and imitated variety from the Vercelli rice mills, Carnaroli rice. Excellent for 5-star risotto! He is called the King of Rice not for nothing. Used by great star chefs and in the best restaurants, Carnaroli boasts a huge variety of uses.
Carnaroli rice derives from the crossing of two other varieties, Lencino and Vialone Nano which are in all respects its "ancestors". It has a grain length of about 7mm and it is precisely this characteristic that has made it rise to the highest levels of the kitchens. Carnaroli also has a great property: during cooking which lasts about 16/18 minutes it does not overcook and does not disintegrate. It has a good amount of starch that is not completely released, it also holds very well and absorbs liquids during cooking; therefore, excellent for creaming Risotto!
A tip: pass it under running water before cooking to remove a part of starch and then toast it in a pan with a drizzle of oil before adding the water or cooking broth! Stir in a knob of butter and two mint leaves, a sight! Enjoy your meal!
