Spelt looks like a highly digestible cereal and is rich in nutrients including vitamins A and B and also a high protein content compared to its wheat, rye and barley.
Triticum dicoccum as it was once called can be used in different ways in your kitchen:
with a 45-minute boil you can eat it comfortably as a boiled rice, you will have a great advantage though: large amount of fiber and much lower calorie intake.
by letting it come cold instead you can make us a delicious salad called Farzotto! Enrich it with mixed vegetables, green beans, peas, carrots and courgettes. Excellent vegetarian recipe.
A tip: the cooking is too long? Soak the spelt for 5-6 hours and you can shorten the cooking in just 15 minutes! Less time spent - less gas - less pollution!
