From the original grandmother's recipe, a corn biscuit of unparalleled goodness.
We decided to draw inspiration from our Grandmother Rita to recreate the ancient recipe of Cornmeal biscuits, called "pasta di melia" in Piedmontese or the most famous biscuits of the Savoy tradition, Corn biscuits.
To do all this we have searched in the cookbooks at home of our Grandma Rita, here we have found a lot of recipes that you can find on our Blog together with the most modern of our Katia!
Our cornmeal biscuit is made with water-milled cartoon cornmeal, just like in the past, in our mill on the Riviera, a historic fifteenth-century factory. Today we still use it to produce our flours!
The cornmeal flour is very fine, it is the innermost part of the corn grain and having no gluten we need it to be of the right fineness. We mix the Corn Comics with our Type 1 of Soft Wheat and finally add a sprinkling of raw Polenta, to make the biscuit rustic at the right point.
A great way to make or get a gift, in a simple and cute package at the same time.
